Brenda's Photo Challenge


I was visiting a site, which led me to another site, which in turn led me to another site and ... I put my name in on a challenge! Well, lo and behold, I got picked to host the next one! I am a day late in posting this challenge of Holiday Decorations challenged by Kim and I truly am sorry for being late and hope in the Christmas spirit, I will be forgiven. Kody's Poison Oak



Kody worked with his 'uncle' Neil Sat. Nov. 22nd, clearing wild roses and brush from our neighbors (across the street) backyard. There was quite a bit growing up and around their RV's covering and they offered Neil $200 plus whatever it cost to take it to the dump. Neil said he'd give Kody $20 if he'd help him load it all into his trailer. Kody was all for it as he wanted to put that $20 with the $20 he got from his Grandpa Jerry and buy a few things, such as new sneakers and a belt.

On Tues. the 25th, he came home from school early complaining of a 'rash' and itching on his arm ... it wasn't too bad, just several bumps here and there. I figured it must be poison oak and I had him start putting on some calamine lotion. We went up camping to the lake the next day ... by Sunday I took him to the ER at the hospital and got him started on some predsione. These pictures are after 6 days taking the meds. Finally he's got relief, but the predsione is disrupting his sleep pattern and giving him 'bad' dreams. He agreed that he could deal with that to be rid of the poison oak ... poor Kody, it seems he goes thru one thing after another.

The rash was all on just one side of his body and it went further down onto his hip, his pants covering that part. I'm glad it's all drying up and only 5 more days after today to be on the meds.

#43 - DELICIOUS!

Luscious Four-Layer Pumpkin Cake
Prep 20 min. Total 40 min.

Pre-heat oven to 350°F - Grease and flour 2 (9-in) round cake pans.

1 - pkg (2-layer size) yellow cake mix
1 - can, 15oz pumpkin (not pie filling), divided
1/2 cup cold milk
1/3 cup vegetable oil
4 - large eggs
1-1/2 - teaspoons pumpkin pie spice, divided

**** FILLING ****

1 - pkg cream cheese, softened
1 - cup powdered sugar
1 - tub (8oz) Cool Whip whipped topping, thawed
1/4 cup caramel topping
1/2 cup Planters pecans

Beat cake mix, 1 cup of the pumpkin, milk, oil, eggs, and 1 teaspoon of the pumpkin pie spice in a large bowl with electric mixer on medium speed until well blended. Pour evenly into prepared pans. BAKE 20-25 min. or until toothpick inserted in centers comes out clean. Cool completely in pans on wire racks.

Beat cream cheese in medium sized bowl with electric mixer on medium speed until creamy. Add powdered sugar, remaining pumpkin, and remaining 1/2 teaspoon pumpkin pie spice; mix well. Fold in whipped topping.

Remove cooled cakes from pans brushing any crumbs gently off; cut cakes in half horizontally with serrated knife. Stack the layers on serving plate spreading the cream cheese mixture between layers leaving top layer unfrosted. Drizzle top layer with caramel and top with pecans. Store in refrigerator. Serves 16.

I am grateful for my halogen oven my husband bought me for our motorhome. I am grateful we got to go camping and eat this wonderful bird with all the trimmings!!

Turkey Day 911


I UNDERCOOKED THE TURKEY
Fix It: If the bird seems undercooked, usually the breast is fully cooked while the legs need more time. Cut the breast meat off with a sharp knife and serve that. Meanwhile, put the drumsticks and thighs back in the oven at 450*F.
THE STUFFING IS TOO WET
Fix It: Lay all the stuffing out in the thinnest layer you can on a sheet pan and put it in the oven to dry out. The thinner the layer, the faster it will dry.

IF I BOIL THE SPROUTS, THE KITCHEN SMELLS TERRIBLE!
Fix It:
When it comes to Brussels sprouts, brown them; don't boil them. Slice raw sprouts very thin. then brown them in a very hot pan using bacon fat or some of your turkey fat. I like to add chestnuts and lemon zest. When you brown the sprouts, they become nutty and sweet.
I FORGOT THE CRANBERRY SAUCE
Fix It:
Cranberry sauce is a sweet and sour relish to complement the rich flavor of turkey. In its place, you can use whatever fruit you have on hand, whether it be frozen strawberries, canned peaches, or sliced pineapple. Process the fruit in a blender with sugar and vinegar until it is a sweet and sour combination to your liking. Your guests will think you invented a new relish!
THE GRAVY IS WEAK AND PASTY
Fix It:
You always want to have extra stock on hand to make your gravy-at least one can per two people. If your gravy is too thick, add canned chicken stock. If too thin, mix a melted tablespoon of butter with a tablespoon of flour, adding it to your gravy and bring it to a boil, whipping it. To boost flavor, add 1/2 teaspoon Kitchen Bouquet Browning & Seasoning Sauce (or more) to taste.
THE TOP OF THE PUMPKIN PIE BURNED
Fix It:
Burning is only skin deep, so carefully scrape the charred flakes off and top the pie with a big dollop of whipped cream!

MY MASHED SPUDS ARE SOUPY & I RAN OUT OF ONES TO BOIL
Fix It:
Add unseasoned, canned, dry bread crumbs until the crumbs have absorbed all the excess water, milk, or chicken stock you had used. It works every time.
AS ALWAYS, I MADE WAY TOO MUCH
Fix It:
Bored of the second-day turkey sandwiches? For a new take on traditional Thanksgiving soup, you can make great dumplings out of leftover stuffing. Mix stuffing with 3 whole beaten eggs, then let it sit for a few minutes to absorb the moisture. Use 2 tablespoons of the stuffing mixture to form each dumpling and cook for a few minutes in a simmering broth made from other on-hand ingredients-chicken stock, onion, squash, and turkey. Top with shredded cheese once it's in the bowl and serve.

My grandest babies!

The kids spent the night Monday and I was soooo busy trying to get dinner on the table, then clean up 'n do dishes, then baths ... *whew* ... that I forgot to take pictures! I snapped these yesterday morning and finally have sat down to load them to post here ... so, here's Landen (age 2 on Sept 24th) and Emma (age 4 Sept 27th) who are just barely 2 yrs apart in age. The older they get, the easier taking care of them, too.

#38 - CANDY

My poor Kody ... he'd worked so hard on getting what he wanted together to be a "Teenage Vampire" for the costume party at school, which was also an early release day. We were scheduled to work at our church's AWESOME Harvest Festival, where lot's of games are played and you can get massive amounts of candy ... but ...

Thursday night, he went to bed at just after 9pm, then awoke me at about 2:30am, saying, "Mom ... I just threw up. I need you." I got up and followed him towards the front bathroom, just before his bedroom and whispered, "Where'd you throw up at?" He "moaned" on the floor into the bathroom and in the sink ... as my feet got to the hallway, before reaching the bathroom door ... I was shocked awake, totally wide-eyed awake. Never in all my LIFE have I ever seen somebody puke the way he puked ... it was EVERYWHERE!

I kid you not ... the bottom third of the wall to the right of the bathroom door, almost half of the door itself ... the front third of the bathroom floor, the cabinets to the right of the sink, splattered all over the entire sinktop and surrounding wall ... oh - my - gosh. Know what he said after I cussed? ( Yes, you read that right, ... I said, "HOLY SH** Kody!!" ) ... he says, "... but I'm not sick Mom ... I'll be okay to go to school, really, I'll be okay!" I gave him my non-sympathic, evil, knives and daggers look and said, "Go - to - bed - now. Please go." He walked off mumbling that he was sorry but that he was okay now ...

It took me a little over an hour and much gagging to get it all cleaned up. I ended up putting some Vicks Vapor rub under my nostrils after the first twenty minutes of going through almost half a roll of paper towels. I'd read that in a book someplace or heard it on TV ... can't quite remember, but it worked. It really made a difference. Kody did wretch a couple more times, in the infamous puke bowl that follows the sick person where ever they're at.

I crawled back into bed just after 3:40am ... after apologizing to him, telling him I was sorry I was grumpy and he said it was okay ... he said he'd have been madder than I got if it'd been the other way around ... I did notice that he'd started to try to clean up using some toilet paper ... he was pretty sick.

He didn't go to school ... and at 4pm, a bit before Pen called me and I told her about all this, I took his temp ... 101.2 ... I had promised that if he'd not had a fever, I'd take him to the Harvest Festival for a lil bit ... I told him his temp and he laid back in his bed, closing his eyes and sighed, "I'm done for then." My poor Kody.

He missed all the fun, and to top it all off, some jerky kids came into the yard, taking his pumpkin that he'd bought and carved and threw it face down at the top of our driveway, busting it up. He was one sad fellow. Audrey felt so sad for him ... she took the candy she'd gotten and gave him what you see in the bowl. All on her own and it made me swell with pride that she was so thoughtful. I hugged her and thanked her and praised her for her kindness.

That was yesterday. Today, he is almost back to his old self. And I don't smell puke anymore ...

When I saw the challenge to spy something orange, my immediate thought was of Atascadero High School ... why? Because we are The Greyhounds and our colors are Orange and Grey!

I thought of going up to the school and taking a pic ... but never made it. However, this weekend is our town's 35th annual Colony Days extravaganza and I was helping with a "booth" from our church Women's Ministry fundraiser selling sunglasses but had a chance to walk around and found THIS orange robotic bug at the High Schools robotic "booth" ... it's battery operated and has a lil black swicth on it's "rear-end" and it walks! It is way cool ... my new ORANGE find ... er, uhh, I mean ... new orange SPY!

P.S. I also bought Kettle Corn and two baked potato bags!

LisaBoo's Baby!

I am posting this because I tend to have a horrible affliction of what's commonly know as: FAVORTISM. Yes ... me. I admit it. I know one is NOT supposed to favor one child over another, yet I have this compulsion to stalk Lisa with a vengance. "WH-WHAT!", you exclaim. "WHY?", you ask?

Because she stole my heart while she was attending school here in California, several years ago ... and since she has my heart I must follow her everywhere she goes and find cutesy lil things to show her my life is not totally amiss with her having my heart ... and today, I found this. Now I can watch her baby grow, too!



Week-by-week as her pregnancy date approaches, we will see the baby ticker grow and develop, matching her own baby's development. AND ~ like any happy bouncing baby, the baby ticker baby will move around. I hope LisaBoo will like this and want to steal it for her webpage, too!!

I love you Lisa!

These are tie-tab panel drapes in our dining room. I stood on a chair to get up almost even with the tops for them to be shown more clearly. I have Hunter Green ones in our front room and you can see a fuzzy bit of them in Challenge #30.

My father-in-law is a very creative man who makes some of the neatest things! Not long after having met my husbands parents, when we'd gone over to their house, I'd noticed a tinkling when we walked in through the front door. I'd never seen nor heard of a door harp before and I just loved theirs! At one point later, Bruce had asked what was my favorite color. I told him I loved green and most all shades of green.

This is a harp he made and gifted to me! He has made them in different shapes, painting them in various colors with varied embellishments. Under the bridge that the balls hang from, he's written his nickname 'SCUZZY' with '#60' (he numbers each piece of every item he's made!) followed by the date '5-98'. This is now the third house it has welcomed in one and all with a lovely tinkling. I like to think it's the LAST house it's going to hang in, but who knows ... maybe someday we'll move again. If so, it's going with me!

SIMPLE APPLE DUMPLINGS

Recipe given to me from my Mother-in-law, Lorraine.
( Pre-heat oven to 350 degrees)

1 tube ( 8 ounces ) refrigerated crescent rolls
2 med/large Granny Smith apples, peeled and quartered
1 cup sugar
1 cup orange juice
1/4 cup butter ( or margarine - but butter yeilds better flavor! )
1/2 teaspoon apple pie spice ( or pumpkin pie spice )

Unroll crescent dough and separate into eight triangles. ROLL up one apple wedge in each triangle; pinch dough all around apple to seal. Place in an 8 inch baking dish.

In a medium saucepan, bring sugar, orange juice and butter to a rolling boil. Boil one minute. Pour over dumplings ( dumplings will float to top ). Sprinkle with apple ( or pumpkin ) pie spice. Bake uncovered in 350 degree oven for 20-30 minutes or until golden brown. Serve warm with vanilla ice cream or whipped cream. Serves 8.

*NOTE: As shown, this recipe doubles easily using a 13 x 9 x 2 pan. You can sub Golden Delicious apples for Granny Smith apples for softer consistency. Beware tho... when doubling recipe, you'll want to eat more than ONE!

Our Pastor at church this morning (Sunday August 24th ) shared a part of the prayer St. Patrick's Breastplate: Christ with me, Christ before me, Christ behind me, Christ in me, Christ beneath me, Christ above me, Christ on my left, Christ on my right, Christ when I lie down, Christ when I arise..."

Next, in his sermon, Part 4: A Series on the Book of Colossians, he read from chapter 1 verses 15-17:

"He is the image of the invisible God, the firstborn over all creation. For by Him all things were created; things in heaven and on earth, visible and invisible, whether thrones or powers or rulers or authorities; all things were created by Him and for Him. He is before all things, and in Him all thigs hold together."

He then shared the below video clip which just left me in open-mouthed awe ...

When living in Paso Robles, we had a young couple living across the street. The man, Donnie, and my hubby used to chat now and then. Donnie was in the military. I never really spoke to his wife, also named Laura, much other than brief 'hellos' or a wave driving past each other.

Then Donnie told Bill they were going to Germany! We ended up getting some of their things that they couldn't take and Bill also bought items from their yard sale.

Laura wrote me from Germany. I have kept every single personal letter she wrote to me (this picture isn't including the Christmas and birthday cards!). We became good friends over those exchanges, and, we still keep in touch. You just never know who will fill your heart with friendship and joy ... even beginning just through LETTERS.
