Brenda Photo Challenge!

For the month of January, I was selected to host The Brenda Photo Challenge, so I chose my theme "Anything New". Then it was my turn to pick the next host and I asked Joan of Joan's Journeys. These were the guidelines from Joan:

Standing by the dining room table, this is what Landen sees ...


Believe it ... there are a minimum of 35 doves living in these trees that coo all the time.



I watched when this tree was planted in the early 60's. Now, when fall arrives, the majority of the leaves fall from this tree, drifting into our backyard swimming pool.


I'm going to try to do better at the next Challenge as I feel I just didn't capture much of what really could have been better ideas! Thank you for looking!!

What my hubby has to look forward to?


An old man goes into a drug store to buy some Viagra.
'Can I have 6 tablets, cut in quarters?'

'I can cut them for you.' said Dan the pharmacist.
'But a quarter tablet will not give you a full erection.'

'I am 96.' said the old man.'I don't want a full erection. I just
want it sticking out far enough so I don't pee on my slippers.'

laugh at how I could see my husband thinking up something like this!

That NEW recipe~

SLOW COOKER LASAGNA

Level of Difficulty: Easy

No need to cook the noodles first
or stay home while it bakes!


INGREDIENTS:
1 pound uncooked lean ground beef (with 7% fat)
1 small onion, chopped
1 medium garlic clove, minced
28 oz canned crushed tomatoes
15 oz canned tomato sauce
1 tsp table salt
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes, or to taste
1 cup part-skim ricotta cheese
1 1/2 cup part-skim mozzarella cheese, shredded, divided
6 item dry lasagna noodles, no-cook
1/2 cup shredded Parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano

Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic; cook, stirring frequently, breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and red pepper flakes; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.

Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.

Cover slow cooker and cook on low setting for 4 to 6 hours. Remove cover; turn off heat and season to taste, if desired.

In a small bowl, combine remaining 1/2 cup of mozzarella cheese and Parmesan cheese; sprinkle over beef mixture. Cover and set aside until cheese melts and lasagna firms up, about 10 minutes. Yields 1/6th of dish per serving.

To boost your vegetable intake, add a can of zucchini in tomato sauce to the meat mixture. You can also add 2 cups of sliced shiitake mushrooms!

*MY NOTES:

I didn't have just oregano so I used the Pampered Chef Italian Seasoning. I'm glad I did as it was more flavorful. I also used my garlic press and used 3 cloves. I used half a teaspoon rather than a quarter of the hot pepper flakes, too. I set my cooker on HIGH for two hours then turned it down to not quite medium for another hour. It was wonderfully good! I will next time use a bit more of the spices since our tastes are pretty robust. This is now on my favorites list from Weight Watchers!!

ANYTHING NEW!!

As you may (or may not?) recall, I got invited to host the next Brenda Photo Challenge for this month of January. There is a post in December showing the 3 Christmas/Holiday items, and I picked the theme of something NEW for my theme. Below are my 3 NEW things. The first is of a reciept for a NEW reservation that will take place in September this year. We're planning a church campout! The park is just beautiful and is very near (walking distance) to the Salinas River. We stayed here with a small group last year and had a great time fishing, relaxing, sharing food, singing around a campfire ... fun!

This is a NEW recipe I'm going to fix tonight along with a tossed green salad and reduced fat crescent rolls. YUMMM!

It's All Done ...


I came home from our 2 week trek to Pismo Beach, excited to see what the new spy's were that I'd missed and what the current one would be ... only to find that there will be no more. I left my goodbye and now am at a loss as what to do. I mean, I started this blog for the sole purpose of doing the I Spy ... so, now what? *sigh*

I will put in here the last two spys, then I guess I'll think about what I'm going to do ...

This is the youngest grandaughter, who has my heart wrapped around her lil finger, opening a gift we'd gotten for her for her new kitchen that her Momma gifted.

#47 - TIME

The clock in our front room that was gifted to us from my hubby's parents. I love the chimes that play every 15 min. Starts with 1/4 of the tune at 15 past the hour, then does 1/2 of the tune at 30 minutes past the hour, then at 45 minutes past it does 3/4 of the tune, finally ending with the full tune at the new hour along with a "gong" for each hour ... love, love, LOVE it!

So, this is it for now. I'll be thinking about what I'm going to do ....
